Helpful Tips: Be careful not to grab the SALTED butter when baking, OR accidentally reach for the self-rising flour canister instead of the plain. Oh gracious... We both had our share of baking mishaps and moments of wanting to towel-pop the other, yet that only adds to the fun.

(Which really isn't fruit cake at all, but a spice cake with pineapple and nuts; not a gorgeous cake to look at, but one of my favorites. Delish!)...
Twin Boston Creme Pies with Ganache
(Ganache and anything is fabulous! This is my husband's Birthday Cake of choice, which I had to learn to make when we married. I'd never heard of Boston Creme Pie before. Go figure...)
A yummy pumpkin pie (from an old family recipe made with molasses and scorched milk. Yum!)

And finally, Kelsey made those delectable little Chocolate Chip Cookie Dough Cupcakes I told you about recently...
And now...I'm officially done with baking (until Thanksgiving) as another deadline is all too quickly approaching in December. But the time with Kels sure was fun. Great memories. And some delicious food that she's taking with her to work! I love to bake but I cannot keep it around the house. I know myself and myself will eat it!
I took advantage of early voting last week (yay!) but if you haven't voted yet, please exercise your right––and extreme privilege––to do that today. Cast your ballot! Let your voice be heard, and remember to keep in prayer for our nation and its leaders, and recommit, with me, to living out II Chronicles 7:14.

But our planned bake out almost didn't happen because I couldn't find the one special cookbook (my "legacy" cookbook as my editor Karen aptly named it) that I needed that had all of our family recipes, and a ton of Mom's handwritten recipes. I finally found the cookbook (you can read that story here), but it was definitely a "led find." Suffice it to say...I'm so grateful we have a Lord and Savior who cares about the small stuff.
With what was lost now being found, the Girl's Bake Out was back on!

The photos of your delectable culinary delights surely merit an A+, and now I am hanging out for a taste of that yummy looking Pumpkin pie,to say nothing of your Twin Boston Creme Pies, birthday cakes, choc chip cookies,your Mum's Japanese Fruit Cake and the like... definitely, "Heavenly Manna" in every sense of the word!!

ReplyDeleteThat Japanese Fruitcake brings back memories, I believe that it is a Southern thing. Growing up in South Carolina, every Christmas my mom baked from scratch, a Japanese Fruitcake, only she baked 2 vanilla layers and the middle layer would be chocolate with chopped nuts and golden raisins. She would assemble this 3 layered, heavenly delight using a sweet lemony glaze and garnished with fresh coconut. Can you say PURE BLISS, with every mouthful!
It is so nice to see you and your beautiful daughter having a blast! All that baking and your BUNDTS are still in tact...wonders never cease! LOL

Sounds like you had such a good time with your Girls Bake Off, and I am still so happy that you found the missing cookbook. ~ This year I had to vote by Absentee ballot (knew there was NO way I could stand in a long line, plus I'm still not driving yet) but what a wonderful feeling when I mailed in my ballot last week!! ~ Thanks for the reminder about that verse in II Chronicles....another one I have highlighted in my Bible and one we all need to remember every day. ~ Hugs, Patti Jo :)

ReplyDeleteSorry for sabotaging that diet, Rosie. But really, you CAN lose weight and have these treats on occasion. But that's the kicker--on occasion, huh? Sweets are my downfall!
Veronica, this Japanese Fruitcake has two spice layers and one vanilla layer, then has a lusciously creamy pineapple and coconut filling. If you're willing to share your recipe, I'd love to try it. I adore lemon!
One of my favorite things right now are the Yoplait Delights, Lemon Torte Yogurts. Oh. My. Goodness!! Fabulous and only 100 calories! Which, LOL, feels odd talking about calories with the aromas of all these cakes and pies still lingering in my kitchen. But still, love the yogurt and those live active cultures.
Patti Jo, congrats on already voting. Cool that you enjoyed a similar version of the JFC that Veronica's family made. Again, if you gals have the recipe, do share! A Southern cake, for sure.
When I think of a a Girls Bake Out, I think maybe we'll go crazy and bake two cookie recipes! LOL. You do cakes...and fancy ones at that!!!! But what are you going to do with them all? I mean they won't store well, will they? I guess there's nothing for it but to eat your way through the lot and then where will your bundts be?

ReplyDeleteI'm a fan of "bake and take," so Kelsey took the majority of our goodies with her to work. I couldn't even handle the leftover Halloween candy being in the house. I tried to hide it from myself yesterday but that didn't work. So off it went to work too, split between Joe and Kelsey.
Oh, and for the record, the Coconut Cake "freezes beautifully" (as they say in Steel Magnolias), and is best served after chilling for at least two days

ReplyDeleteOh yummy! The delectable delights look just scrumptious. I'm gaining weight just looking at them, so I'll have to be content with just looking. Have to watch my ever-rounding figure. This little baby is sure not wasting time filling out my belly. :) But I lost 2 pounds from last month, so doctor says I'm doing great. Of course, the holidays are coming up soon. Not going to be easy, but I'm sure I can get through without gaining weight.
ReplyDeleteGlad you had such a great time with Kelsey. I miss baking with Mom in the kitchen. She's 2000 miles away. But we're heading back there for Thanksgiving this year, so I'll get to enjoy this holiday with her again.
And I know what you mean about that special family cookbook. Mom has ours right now, but it'll go to me eventually. Oh, what treasures are contained in that book!
Hope you have a great time cooking with your sweet mom at Thanksgiving, Tiff. And just a word of advice... Take your camera and get some digital shots of those recipes. I love having mine digitally as well as hard copy. Happy baking together (and take lots of pics of that too!). :)
